After a grueling expansion of my USDA licensed Butcher Shop, I'm ready to offer our next one.

This 1 day immersive event will take you through an entire Hog carcass....

IN ONE DAY!

And this time - It WILL BE a MEISHAN Carcass!!! WE FINALLY HAVE ENOUGH!!!

On Saturday, January 18th, 2025, we'll work in my expanded USDA butcher shop along side the Butcher Babes that are working Jensen Reserve that day too.

From the cut table to your fridge to your dinner plate...it's all YOU!

YOU'RE doing the work with 5 other participants.

Prepare to be taught:

- Carcass evaluation for cut utilization

- What Equipment You Need at Home to Do This Yourself

- How & Where to Cut Chops, Pork Belly, Coppa Roasts and more

- Knife Skills

- USDA Sanitation Practices that You Can Use at Home

- How to Package Cuts for Your Fridge or Freezer

- Make Custom Grinds and Sausages

AND Take Home Your Work! Products from our work will be divided amongst attendees as part of the class for you to share your work with friends and family.

Shipping:
Airfreight can only be arranged when temperatures in Atlanta (departure) and the destination address is under 80 degrees as COVID conditions allow.
Estimated shipping is $599 but may be more due to increased airfare to certain locations. Please note that the number of cities airlines are flying to has reduced. Animals will only be shipped on direct flights.
We will help determine the best option on an individual basis.
